Performa+ is the complete line of technical flours developed by Molino Pordenone together with Maestro Ezio Marinato, designed to guarantee optimal performance to every dough and for all preparations: thanks to the extreme versatility of Performa+, it is easier to manage raw materials in the laboratory, reducing errors and facilitating operators' work.
Performa+ is a range of pure type 0 and type 1 flours with different strength characteristics, born from the careful selection of top-quality grains and an advanced milling technique.
Performa+ flours express excellent performance with different hydration percentages, guaranteeing
working tranquillity at all stages.
They can be used for direct doughs and/or also for bigas, sourdough and very hydrated doughs, and in any other type of preparation.
