The milling process involves careful selection of wheat from the best crops in Italy and around the world, selected according to variety, protein quality and organoleptic characteristics, as well as the quality of the crop years. Selection through optical sorter - which analyzes each grain passing through the mill - conforms the wheat grains and prepares them for milling. The milling is gentle and progressive, it is carried out through duly spaced milling rolls, and is done on individual wheat cultivars, preserving the inherent native characteristics peculiar to the milled grain varieties.
