A laboratory machine with a double tank without overturning, horizontal extrusion with a refrigerated channel. The length of the channel guarantees the formation of a dough of well above average quality.
The SG30 is the only machine on the market with a centrifugal mixing bowl. This tank, which takes its cue from the pre-mixers of line machines, has a point mixing and is therefore very homogeneous, while hydration is static, faster and with less oxidation of the dough.
The SG30 can be considered a ‘naked’, i.e. without a shell, with undoubted advantages on cleaning speed and hygiene, but also on heat dissipation by the motors.
The dimensions and parameters of the extrusion section (channel, screw and motor revolutions) have been completely revised, achieving an efficiency close to 80% (ratio between the volume of dough contained in a screw coil and the amount of dough that actually comes out at each revolution). In practice, a ‘toroid’, or ring of dough, is extruded in little more than one revolution of the screw.
The SG30 is a laboratory machine: to ensure continuity of extrusion without interruption, pouring is achieved through a sluice gate, without opening the tank lids. It is therefore possible to produce stock and transfer it without interrupting extrusion. This is easier, less tiring and safer.
Cleaning the machine is very fast, thanks to the rapid disassembly of the mixing and extrusion blades, the sluice box, and the shaft block, without the need for tools.
