Single tank machine, on trolley with horizontal extrusion, suitable for restaurants, bistros, pubs, fast food, food trucks, workshops, etc. Doughs can be obtained by mixing any type of white or wholemeal flour and durum wheat semolina with the addition of eggs, water, flavoured powders, ..... The D45-C 2.0 can produce short, long and sheet pasta with the appropriate dies. The tank is separated from the extrusion screw by a sluice gate to prevent the screw from stressing the dough during mixing. The capacity of the tank has been dimensioned with the same objective in mind: the shorter the residence time of the dough in the tank, the lower the stress on the dough, guaranteeing optimal glutinous mesh formation. The length of the channel guarantees the formation of a dough of well above average quality. The channel and screw materials guarantee control of the extrusion temperature, which remains well below the risk threshold, WITHOUT THE NEED TO CONNECT REFRIGERATORS OR MAINSWATER.
The machine is equipped with a three-phase motor with single-phase connection and comes standard with a SCHUKO socket.
The 2.0 model also features an overvoltage control system, which protects the machine in the event of excessive motor stress. In practice, if the operator produces a dough that is too dry for the dies to extrude, the machine automatically stops, the screw makes a series of reverse turns releasing the pressure from the die, allowing the operator to remove it and correct the hydration of the dough, without damaging the machine.
Semi-automatic/automatic ravioli machines can also be combined with the D45-C 2.0 at a later date.
